Summer Salad

This will make 2-4 servings, based on whether you make it as a meal or have it as a side. Top it with your favorite grilled protein for the perfect summer meal!

Ingredients:

1/4 cup extra virgin olive oil

3 tablespoons balsamic vinegar

3 tablespoons honey

1 teaspoon salt

1/2 teaspoon garlic powder

4 cups spinach

1/4 cup feta cheese crumbles

1/4 cup unsweetened dried cherries (can substitute dried cranberries or chopped apples)

1/4 cup chopped walnut pieces

1 medium to large avocado, diced

(You can add additional veggies of choosing! I often add in chopped English cucumbers.)

Directions:

  1. In a bowl, combine olive oil, balsamic vinegar, honey, salt, and garlic. Whisk until well combined. Set aside.

  2. In a separate large bowl, combine spinach, feta cheese, dried cherries, avocado, and walnut pieces. Toss to combine.

  3. Serve portion of choosing and drizzle on desired amount of dressing.
