PB Chocolate Muffins
Ingredients:
2 ripe bananas
1/2 cup peanut butter
1 egg
1 tsp vanilla
2 tbsp maple syrup
1 cup of oat flour (blend oats in food processor or blender into flour)
1 cup of oats
1 tsp baking powder
1/2 cup chocolate chips
Directions:
Preheat oven to 350 F
Mash bananas in a bowl. Add additional wet ingredients and mix well.
Blend 1 cup of oats into flour.
Add oat flour, regular oats, and baking powder to wet ingredients. Mix well.
Mix in chocolate chips.
Pour 1/4 cup of batter into each muffin tin (makes about 10 muffins).
Bake for 20 minutes.
Let cool and store in container.
