PB Chocolate Muffins

Ingredients:

2 ripe bananas

1/2 cup peanut butter

1 egg

1 tsp vanilla

2 tbsp maple syrup

1 cup of oat flour (blend oats in food processor or blender into flour)

1 cup of oats

1 tsp baking powder

1/2 cup chocolate chips

Directions:

  1. Preheat oven to 350 F

  2. Mash bananas in a bowl. Add additional wet ingredients and mix well.

  3. Blend 1 cup of oats into flour.

  4. Add oat flour, regular oats, and baking powder to wet ingredients. Mix well.

  5. Mix in chocolate chips.

  6. Pour 1/4 cup of batter into each muffin tin (makes about 10 muffins).

  7. Bake for 20 minutes.

  8. Let cool and store in container.

230 calories

Carb - 29 grams
