Protein Peanut Butter Eggs
This is a fun rendition of a classic Easter time candy. These are definitely a “treat” and something to be consumed in moderation, but you can be satisfied knowing you are consuming quality ingredients! While shaped according to the season, these can easily be made into protein peanut butter “balls”.
Ingredients:
3/4 cup of quick oats, ground up into flour
1 scoop vanilla protein powder
2 tbsp ground flax seed
Pinch of salt
1 cup peanut butter
1/2 cup honey
1 cup chocolate chips
Directions:
Grind up quick oats in food processor or blender into flour consistency.
In a bowl, combine all of the dry ingredients, mix well.
Add in peanut butter and honey, mix well.
Take 2 tablespoons of the filling and form into an egg, place on parchment lined baking sheet, repeat until all filling is used (should make 11 eggs).
Place baking sheet into freezer until eggs are firm, about 20-30 minutes.
Melt 1 cup of chocolate chips in microwave, melt in 30 second increments stirring after each 30 seconds.
Remove single egg from lined baking sheet and dip halfway in melted chocolate, return to lined baking sheet.
After all eggs have been dipped, place lined baking sheet with eggs into refrigerator until chocolate hardens.
Once hardened, place eggs into a container and store in fridge. Remove from refrigerator immediately before serving.
