Protein Banana Bread

Ingredients:

3 overripe bananas

1/2 cup real maple syrup

1/4 cup olive oil

2 eggs

2 cups quick oats, blended into flour

2 scoops vanilla protein powder (I use Jocko Fuel.)

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips (I use Lily’s dark chocolate baking chips.)

Directions:

  1. Preheat oven to 350 F.

  2. In large mixing bowl, mash up bananas. Add in the rest of the wet ingredients including maple syrup, olive oil, and eggs. Whisk to combine well.

  3. To the wet ingredients, add blended quick oats, protein powder, baking soda, and salt. Stir until well combined.

  4. Mix in chocolate chips.

  5. Grease 9x5 loaf pan. Pour in batter.

  6. Bake for 40-45 minutes, until bread is golden brown and springy to touch.

Per slice of bread (loaf makes nine - 1 inch slices):
