Pumpkin Chocolate Chip Cookies
A fun seasonal sweet treat, and you can feel good about the ingredients you are putting into your body!
Ingredients:
1/2 cup coconut oil, melted
1/2 cup pumpkin puree
1/2 cup pure maple syrup
1 1/2 cups Kodiak Cakes Power Cakes pancake and waffle mix
1 cup quick oats
1/2 cup chocolate chips (I recommend Lily’s dark or milk chocolate chips)
Instructions:
Preheat oven to 350 degrees F.
In a large mixing bowl, melt coconut oil (about 30 sec in microwave). Add in pumpkin puree and maple syrup. Whisk to combine well.
To the wet ingredients, add in Kodiak Cakes mix as well as quick oats and fold until well combined. Fold in chocolate chips.
Measure out 2 oz of dough and roll into a ball. If the dough seems to “runny”, let it sit in the fridge for 10-15 minutes to allow the oats to soak of some moisture and the coconut oil to harden a bit.
On a parchment lined baking sheet, press down ball of dough and flatten with hand to form cookie shape.
Bake for 12 minutes at 350 degrees F. Remove from oven and allow to cool for 10-15 minutes.
