Chicken Pesto Flatbread Pizza
This meal is so versatile! There are so many ingredient combinations you can do to cater to various preferences. It is a perfect recipe for “build your own pizza” night at home. Prep good quality nutrient dense toppings for some healthy family fun! :)
Ingredients:
1 lavash bread (I use the brand Joseph’s)
Olive oil cooking spray
1 heaping tbsp pesto
3 oz shredded cooked chicken
1/2 cup cherry tomatoes, halved
1/4 cup roughly chopped spinach
1/4 cup reduced fat feta cheese
Handful of arugula
Balsamic glaze
Directions:
Preheat oven to 350 F
Place lavash bread on baking sheet and spray lightly with olive oil. Spread pesto evenly on lavash to the edges. Spread shredded chicken evenly over lavash. Set aside the balsamic glaze and arugula, spread the rest of the ingredients evenly on top of the lavash.
Bake for 12-15 minutes, until edges of lavash are golden brown. Remove from oven and sprinkle fresh arugula on top. Top with a drizzle of balsamic glaze.
